Ingredients:
For this dish, use as much veg as you would like – we’ve recommended quantities below to serve 4 people.
- 3 garlic cloves
- 4 carrots
- A pack of baby corn
- 1 head of broccoli
- 3 or 4 egg noodle nests
- 3 tablespoons of soy sauce
- 2 tablespoons of brown sugar
- Cooking oil
Method:
- Start by preparing your vegetables. Peel and chop the carrots, chop the baby corn and broccoli into small pieces and crush the garlic – then set these aside.
- Bring a pan of water to boil and add the broccoli, cooking for 3 – 5 minutes until softened.
- Add oil to a separate frying pan and heat for 30 seconds, then add the carrots and baby corn and fry for 2 minutes.
- Add the softened broccoli and garlic to the pan and cook for 2 – 3 minutes.
- Pour in the soy sauce and brown sugar, mix everything together and leave to simmer, lowering the heat.
- Meanwhile, bring a pan of water to boil and add in the egg noodle nests – boil for 4 – 5 minutes.
- Once softened, drain the noodles and add them to the vegetables. Mix everything together and enjoy!
